Big Mac
This recipe walks you through building your own Big Mac at home, complete with the signature special sauce. You'll make thin, seared beef patties and layer them with crisp lettuce, onion, pickles, and cheese on a triple-decker bun. The sauce comes together quickly and needs a little time to chill, so it's a good idea to mix that up first.

Make the Special Sauce
Whisk together the mayonnaise, white wine vinegar, pepper, mustard, onion salt, garlic powder, and paprika in a small bowl. Season with salt to taste, then cover and chill the sauce until you're ready to assemble the burgers. This gives the flavors a chance to meld. - 02
Form and Cook Patties
Season the minced beef generously with salt and pepper. Divide the seasoned mince into 4 equal balls, using about 1/3 cup for each. On squares of baking paper, flatten each ball into a thin, 15cm circle — these are meant to be thin. Heat the olive oil in a large frypan over high heat until it's shimmering. Working in 2 batches, sear the patties for 1 to 2 minutes per side, until they're lightly charred and cooked through. Transfer the cooked patties to a plate and keep them warm while you finish the rest.
