Beetroot latkes
These beetroot latkes are pan-fried until golden, then finished in the oven, making them tender inside. They're served with a bright, cooling mint yogurt and a simple rocket and cherry tomato salad. Heat Oven, Mix Latkes
Preheat your oven to 180°C/160°C fan/gas 4. In a large bowl, combine all the latke ingredients until well mixed and a cohesive batter forms. - 02
Fry and Bake Latkes
Heat the rapeseed oil in a large non-stick pan. Spoon in the latke mixture to make six round latkes.
Fry them for 4-5 minutes on each side until they're golden brown. Transfer the latkes to a baking sheet and bake for another 10 minutes to ensure they're cooked through.
