In a small skillet, heat 2 cups of water over medium-low heat until you see small bubbles just beginning to rise from the bottom. Add a pinch of salt and the vinegar.
Gently crack the eggs, one at a time, and slowly slide them into the simmering water. Cover the skillet and let them simmer for 8 to 10 minutes, or until the whites are fully set but the yolks are still wonderfully runny. That soft, flowing yolk is what you're aiming for here.
