Beef pumpkin Stew
This beef and pumpkin stew is a hearty, slow-cooked meal that develops deep flavor over time. Prepare the beef
Cut the beef into 1-inch chunks. Toss the beef with the flour until each piece is evenly coated. - 02
Brown the beef and aromatics
Melt the butter in a large soup pot over medium-high heat. Working in batches, sear the beef on all sides until deeply browned. As the beef browns, transfer it to a large bowl and set aside.
Once all the beef is browned, add the chopped onion and minced garlic to the pot. Sauté for about 1 minute, scraping up any browned bits from the bottom of the pot as you stir.
