Barramundi with Moroccan spices

Combine the ground cumin, coriander, paprika, chili powder, minced garlic, lemon juice, olive oil, and fresh coriander in a food processor with a pinch of salt. Blitz until you have a smooth dressing.
Make three slashes on each side of the barramundi. Coat the fish with half of the prepared dressing, then set it aside to marinate for about 30 minutes.
Preheat your oven to 220°C (fan 200°C/gas 7). Place the marinated fish on a roasting tray.
Cook in the oven for 20 minutes, or until the flesh is firm and the eyes have turned white. Serve the roasted barramundi with the remaining dressing, alongside steamed couscous or rice.
