Baked Potato Soup

   Cook Potatoes

   If your potatoes aren't already cooked, peel and cube them. Boil the potato cubes in water for about 20 minutes, or until they're fork-tender.

   Cook Bacon

   In a skillet, cook the bacon over medium heat until it's crisp. Remove the bacon, crumble it once cool enough to handle, and set it aside.

   Make Roux and Add Milk

   Melt the butter in a saucepan over medium-high heat. Whisk in the flour until it forms a smooth paste.

   Gradually pour in the milk, a small amount at a time, whisking constantly to prevent lumps. Continue stirring and adding milk until all of it has been incorporated and the mixture is smooth.

   Thicken Soup Base

   Let the mixture continue to cook, stirring occasionally, until it begins to thicken to a light sauce consistency.

   Add Potatoes and Onions

   Stir in the cooked potato cubes and chopped green onions.

   Simmer Soup

   Increase the heat until the soup mixture comes to a boil, then immediately reduce the heat to a simmer. Stir frequently to keep it from sticking to the bottom of the pan.

   Finish with Toppings

   Stir in the crumbled bacon, sour cream, salt, pepper, and shredded cheese. Mix until the cheese has fully melted into the soup.

   Serve Warm

   Serve the soup warm, adding any extra toppings you like.
