Brush the potato slices with olive oil.
Place the pan about 4 inches from the heat and broil for 6 to 7 minutes, until they're well browned. Flip each slice over.
Take the pan out of the oven and turn the oven off. Top each potato slice with a wedge of Alouette Baby Brie and 1 or 2 strips of sundried tomato.
Slide the pan back into the still-warm oven (don't turn it back on) for another 5 minutes, just long enough for the brie to soften and get gooey.
