Baby Beet Salad

   Prepare the Beets

   Scrub the beets thoroughly, then wrap them in groups of 2 or 3 in individual aluminum foil packets.

   Bake and Peel

   Place the foil packets on a baking sheet and bake at 350 degrees until the beets are very tender, which should take about 1 hour.

   Once the beets are cool enough to handle, slip off their skins (rubber gloves can help here) and discard them. Halve the peeled beets lengthwise and transfer them to a bowl.
