Cook the Beef
Place the flank steak in a pot with beef stock (or water) and a pinch of salt. Cook over low heat for about 2 hours, until the meat is very tender and easy to shred.
Switch the palette to suit the room. Your choice is saved locally.


In a separate pan, sauté the chopped onion, red bell pepper, and garlic in a pinch of extra virgin olive oil until softened. Stir in the cumin, oregano, paprika, and a pinch of salt.
Add the shredded beef to the pan, tossing it with the sautéed vegetables and spices. Cook for a few minutes, allowing the flavors to meld.
Cook the arepas on a griddle or skillet over medium heat for 2–3 minutes on each side, until they are golden brown and sound hollow when tapped.
For a crispier exterior, you can bake them for a few minutes after griddling.
