Combine Dry Ingredients
In a large bowl, or the bowl of your stand mixer, whisk together the 1 package yeast, 2 1/4 cups flour, 1 cup additional flour, 1 cup rye flakes, 3 tablespoons ground flaxseed, 3 tablespoons amaranth grain, 1 cup quinoa, 1/4 cup soy flour, 1 1/2 tablespoons vital wheat gluten, 1 cup skim milk powder, and 1/2 teaspoon salt.
