First, soak the potatoes in just-boiled water for 30 minutes, then drain them well and let them air-dry for another 5 minutes. While they dry, preheat your air fryer to 200°C. Toss the dried potatoes with 1 tablespoon of olive oil, 1/2 teaspoon each of salt and freshly ground black pepper until evenly coated. Transfer them to the air fryer basket and cook for 20-30 minutes, shaking occasionally, until they're wonderfully crisp and golden.
