   Grate and Drain Potatoes

   Start by peeling and finely grating the potatoes. For the crispiest pancakes, use a clean kitchen towel to squeeze out as much moisture as possible from the grated potatoes.

   Mix the Batter

   In a large mixing bowl, combine the grated potatoes, chopped onion, minced garlic, 4 eggs, 4 tablespoons all-purpose flour, 1 teaspoon marjoram, salt, and black pepper. Stir everything together until you have a thick, consistent batter.

   Heat the Oil

   In a large frying pan, heat a generous amount of oil over medium heat. You want the oil hot but not smoking, so it's ready to crisp up the pancakes without burning them.

   Fry the Pancakes

   Spoon portions of the batter into the hot pan, flattening each into a thin pancake. Fry until the bottom is golden brown and crispy, then flip and cook the other side until it's also deeply golden and crisp.

   Drain and Serve

   Transfer the cooked pancakes onto a plate lined with paper towels to remove any excess oil. Serve them immediately while hot, perhaps with sour cream, a garlic dip, or as a side dish alongside something else.
