Wash the vegetables. Peel and chop the carrots, and chop the broccoli into florets. Add them to the pot around the chicken.

Slice the lemons. Squeeze their juice over the chicken and into the pot. You can lay some of the lemon slices directly on the chicken, then add the rest to the pot.
Add a few sprigs of thyme. I like to tuck some whole sprigs around the chicken and sprinkle some of the leaves directly onto the skin.
Cover the pot and place the chicken into the preheated 375 °F oven. Roast for 1 hour.
After an hour, uncover the pot and continue cooking for at least another 30 minutes, or until the chicken is cooked through and the skin is browned and crisp.
