Walnut, date & honey cake

In a large mixing bowl, combine the flour, cinnamon, butter, muscovado sugar, 2 tablespoons of the honey, and the eggs. Mash the bananas and chop the dates — kitchen scissors make this job much easier — then add them to the bowl.

Beat the mixture for 2 to 3 minutes, using either a wooden spoon or a hand-held mixer, until everything is well blended and smooth.

Spoon the batter into your prepared loaf tin and gently level the top. Scatter the walnut pieces evenly over the surface.

Bake for 1 hour. To check for doneness, lightly press the top of the cake; it should feel firm to the touch. If it still feels soft, continue baking for another 10 minutes.
