Combine the lime juice, rice vinegar, palm sugar, fish sauce, chopped bird's eye chillies, and 50ml water in a bowl. Stir it well and then set aside, letting the palm sugar fully dissolve and the flavors deepen. - 02
Prepare Rice Paper
To get ready for rolling, fill a wide bowl with warm water and lay out a clean, damp tea towel on your work surface. Dip one rice paper wrapper into the water for just a few seconds, until it softens and becomes pliable, then carefully transfer it to the tea towel.
