Slice the Pork
Slice the uncooked pork thinly, about ⅛-inch thick. If you find it hard to get even slices, try freezing the pork slightly first; it makes it much easier to cut. - 02

Mince the garlic and shallots finely. In a bowl, combine them with the sugar, fish sauce, soy sauce, pepper, and olive oil. Whisk everything together until the sugar completely dissolves, creating a smooth marinade.
