Grate the zucchini coarsely and let it sit for about 5-10 minutes to release its water. Give the grated zucchini an extra squeeze to drain out all the excess water.
Coarsely chop the shredded carrots into smaller pieces.
Heat a sauté pan with olive oil over medium-high heat until it's shimmering.
Once the pan is hot, scoop out 1/4 cup of the fritter mixture for each patty.
Place each scoop into the hot pan and flatten it gently to form a small patty. Continue until you've used all the mixture; you should end up with 7 fritters.
Fry each side for about 3-4 minutes, until they're golden brown and cooked through.
