Combine Marinade Ingredients
In a bowl, whisk together the honey, Dijon mustard, lemon juice, soy sauce, and minced garlic. Stir until the honey has fully dissolved into the liquids.

Arrange the pork chops in a large resealable plastic container or bag, making sure they fit snugly.
Pour the prepared marinade over the pork chops, then seal the container or bag. Refrigerate for at least 4 hours, or ideally, let them marinate overnight, turning the bag or shaking the container occasionally to ensure even coating.
Before grilling, sprinkle the pork chops generously with coarsely ground pepper.
Place the chops on the preheated grill. Cook for about 5 to 7 minutes per side, brushing them with any leftover marinade as they cook. Keep an eye on them; if they start to char too quickly, move them to a cooler part of the grill rack. The chops are done when an instant-read thermometer inserted into the thickest part registers between 145 °F to 150 °F.
