Strawberry Marshmallow Mousse Recipe

In a pan, combine all but 3 strawberries with the water and vanilla sugar. Set it over medium heat and cook the strawberries until they're soft enough to mash, about 3 minutes.

Remove the pan from the heat and use a fork to squash the berries into a pulpy texture.

Whip the double cream until it holds stiff peaks. Gently fold the whipped cream into the cooled strawberry-marshmallow mix.

Spoon the mousse into a single serving bowl or individual pots, then chill for about 2 hours, or until it's fully set.
