Prepare Chicken and Marinade
Start by making 3 slashes on each chicken drumstick; this helps the marinade penetrate. In a bowl, whisk together the soy sauce, honey, olive oil, tomato purée, and Dijon mustard until well combined.
Pour this mixture over the chicken, making sure each drumstick is thoroughly coated. Let the chicken marinate for at least 30 minutes at room temperature, or tuck it away in the fridge overnight for a more intense flavor.
When you're ready to cook, preheat your oven to 200°C (180°C fan/gas mark 6).

Transfer the marinated chicken into a shallow roasting tray, arranging the drumsticks in a single layer. Roast for 35 minutes, turning them occasionally, until the chicken is tender and glistening with that sticky glaze.
