Cook the brown rice noodles according to pack instructions. Once cooked, immediately plunge them into a bowl of cold water until they are fully cooled; this stops them from cooking further and keeps them from sticking together.
Drain the noodles well, then add the shredded carrot, cabbage, and sliced spring onion. Pour the dressing over everything and toss gently to combine, ensuring all the noodles and vegetables are coated.
