Spicy Cilantro Pesto

   Chop the Cilantro

   Add the cilantro to your food processor. Pulse it until it's finely chopped, but not a complete purée yet.

   Blend and Emulsify

   Add the garlic, 1/2 teaspoon sea salt, 1/4 cup pepitas, and 1/4 teaspoon mild chili powder to the food processor with the cilantro. Process until everything is thoroughly chopped and combined.

   With the food processor running, slowly drizzle in the 1/4 cup olive oil, drop by drop, through the liquid attachment. Continue until the mixture forms a smooth, thick paste.

   Store the Pesto

   Scoop the finished pesto into pint jars. It will keep in the fridge or freezer.
