Blend the Gazpacho
Combine the 3 tablespoons apple cider vinegar, 3/4 cucumber, 4 tablespoons extra virgin olive oil, 3 garlic cloves, 1 1/2 cups grape tomatoes, 1/4 orange bell pepper, 1/2 onion, 2 teaspoons sea salt, 3 on the vine tomatoes, and 1/4 cup water in a blender or Vitamix. Blend until completely smooth, about 3 minutes. Transfer the soup to a container and refrigerate for 1 to 2 hours before serving to let the flavors meld and chill thoroughly.

Garnish the Soup
When ready to serve, pour the chilled gazpacho into bowls. Garnish each serving with crunchy onions and 2 teaspoons chopped parsley.

Prepare Vegan Cheese Toast
Position an oven rack to the second to highest rack from the top. Turn the oven to broil. On a baking sheet, lay out the 2 slices of rye bread and split the 1/2 cup of daiya vegan cheddar crumbles evenly between them.

Broil the Toast
Sprinkle 2 teaspoons parsley and 1/8 teaspoon salt over the bread and "cheese." Place the baking sheet on the oven rack and broil until the edges of the bread are slightly browned and the "cheese" is melted and bubbling. Once the toast is somewhat cool to handle, slice each piece in half.
