Smoky tomato pepper salsa
This salsa combines fresh cherry tomatoes, red pepper, and red onion, brightened with red wine vinegar and given a smoky depth from paprika. Pulse the Salsa
Add the red onion, coriander, cherry tomatoes, red pepper, 3 tablespoons extra virgin olive oil, 2 tablespoons red wine vinegar, and 1 1/2 teaspoons paprika to a food processor. Pulse a few times until everything is roughly chopped, with distinct pieces of tomato and pepper still visible; avoid over-processing into a purée. Transfer the salsa to a serving bowl, then stir in the pinch of sugar.
