Slow-cooked, Wadadli-spiced Cubano pork belly
This recipe starts with pork belly marinated overnight in a bright, aromatic Wadadli spice blend of fresh herbs, chilies, and citrus. After a long, slow roast, the meat becomes fork-tender and ready to be pulled apart. A final blast of heat in the oven gives the skin a deep golden color. You can also turn the skin into crisp crackling shards, roasted between two trays until shatteringly crisp.
