Sledz w Oleju (Polish Herrings)
Sledz w Oleju is a Polish preparation of herring marinated in oil with aromatics. The herring first soaks in water to temper its saltiness, then gets sliced and packed into a jar. It then sits in olive oil with allspice, pepper, and bay leaf, allowing the flavors to meld. This dish needs a few days in the fridge for the flavors to develop, but it's a great make-ahead option that keeps for up to two weeks. Serve it simply with fresh onion, a squeeze of lemon, and some dill or parsley.

Soak the Herring
First, soak the herring in cold water for at least 1 hour. If the herring still tastes very salty after an hour, drain it and repeat the soak, changing the water each time, until the salt level is to your liking. - 02
Slice the Herring
Once soaked, drain the herring thoroughly. Slice each fillet into bite-size pieces.
