Siamese Fried Noodle (Mee Siam)
Mee Siam is a stir-fried noodle dish, built on a base of rice vermicelli tossed with prawns, tofu, and fresh vegetables. It starts with a fragrant paste of garlic, shallots, turmeric, chilies, and lemongrass, which gets stir-fried until aromatic. The noodles are then mixed in with the paste, along with pre-fried dried shrimps and tofu, and quickly cooked prawns. Finish it with a handful of chives and beansprouts for a fresh crunch, then serve with a squeeze of lime or lemon.

Fry Shrimps and Tofu
Heat 1 cup of oil in a frying pan. Lightly fry the chopped dried shrimps, then remove them and set aside. Separately, fry the tofu pieces until they are lightly colored.
Dish both out and set aside.
