Shakshouka
Shakshouka is a skillet dish of eggs poached in a rich tomato sauce, seasoned with garlic and black pepper. The process starts by toasting the aromatics in a dry pan, then infusing them in olive oil before adding fresh tomatoes. After simmering and reducing the sauce to your preferred thickness, you'll make wells and carefully crack in the eggs. The eggs cook directly in the sauce until the whites are just set and the yolks are still runny, finishing with residual heat off the stove. Serve it warm with flatbread for dipping.
