Cover the diced salt beef with water and bring it to a boil. Drain the water and replace it with fresh water, repeating this process as necessary to remove some of the excess brine. This step helps control the final saltiness of the dish. - 02
Simmer the Beans
In a separate large pot, combine the kidney beans with 2 cups water, 3 cups coconut milk, bay leaves, allspice, 2 whole garlic cloves, the whole scotch bonnet pepper, and scallions. Bring the mixture to a slow boil, then reduce the heat and simmer for about 2 hours, or until the beans are very tender and creamy.
