Rappie Pie
Rappie Pie is a hearty dish built around a unique potato preparation. You'll juice raw potatoes, keeping the starchy pulp and discarding the liquid, then mix it with chicken broth, salt, and pepper until it resembles oatmeal. This forms the base for layers of tender, simmered chicken and deeply caramelized onions. Baked until golden, it's traditionally served with a pour of warm chicken broth over each portion.

Preheat Oven, Prepare Pan
Get your oven going to 400 degrees F (200 degrees C). While it heats, grease a 10x14x2-inch baking pan. - 02
Caramelize Onions
Melt the 2 tablespoons of butter in a skillet over medium heat, then add the chopped onions. Cook, stirring occasionally, until the onion softens and turns translucent, which should take about 5 minutes. Reduce the heat to low and keep cooking, stirring every so often, until the onions are very tender and have turned a deep, dark brown — this slow caramelization takes about 40 minutes.
