Perfect Roasted Pork Loin & Homemade Rosemary Applesauce

Place the seasoned pork pieces on separate baking sheets and roast for 45-55 minutes. Remember to switch the baking sheets halfway through cooking to ensure even roasting. The pork should reach a safe internal temperature. If you like a browned, crisp exterior, you can finish each piece under the broiler for about 5 minutes after the initial roasting time.
Once out of the oven, let the pork rest for at least 10 minutes before slicing. While the pork roasts, you can start the applesauce. In a large sauté pan over medium heat, add the butter, apples, rosemary, brown sugar, cinnamon, and salt. Cook this mixture for about 8-10 minutes, until the apples have softened slightly.
Pour in the water and let the applesauce simmer for another 10 minutes. The apples should be very tender at this point.
Carefully use an immersion blender to blend the mixture to your desired consistency – whether you prefer it chunky or smooth. Let the applesauce simmer for another 5 minutes or so to meld the flavors. Serve it warm with the roasted pork.
