Marinate Mushrooms
Preheat your oven to 325 degrees Fahrenheit.
In a bowl, marinate the portobello mushrooms in the soy sauce, minced garlic, shallot, salt, and pepper.

Let the mushrooms marinate for 30 minutes. After marinating, grill or broil them for 2 minutes per side, then transfer to the preheated oven and bake for 10 minutes. Once cooked, let them cool slightly before cutting into thin 1/8-inch strips.
While the mushrooms cook, pat the scallops very dry with a paper towel and season them generously with salt and pepper. Heat a large non-stick skillet over high heat until it's shimmering. Sear the scallops for about 1 minute per side, or until they have a deep brown crust.
