Sprinkle each side of the lamb loin chops evenly with kosher salt and ground pepper. Once the oil is hot, carefully place the lamb loins in the pan and sear for about 2 minutes per side, until a deep brown crust forms.

Transfer the seared lamb loins to the preheated oven. For rare lamb, cook for no more than 2–3 minutes. For medium-rare, aim for 6–8 minutes. If you prefer medium, cook for 9 to 11 minutes, and for well-done, leave it in for 12–14 minutes. Remember that the lamb will continue to cook slightly after you remove it from the oven, so factor in a few degrees of carryover cooking.
