Add the 4 ounces of cream cheese to the dough mixture and incorporate it well. Drop in the 1 egg yolk and stir with a fork until the dough just comes together into a ball.
Turn the dough out onto a lightly floured surface and roll it into a uniform ball. Gently press it flat with the palm of your hand, then wrap it tightly in plastic wrap. Chill the dough for at least 1 hour.
Once the dough has chilled, unwrap it and place it on a floured surface. Roll it out to about 10 x 1.
Arrange the dough squares on a parchment paper-lined baking sheet and place them in the freezer to chill briefly while you prepare the filling.
In a separate bowl, combine the 2 large apples (diced), 1/2 juice of lemon, 2 tablespoons maple syrup, 3 tablespoons sugar, 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, 1/4 teaspoon ground allspice, 1/8 teaspoon ground cardamom, and 1 tablespoon brown sugar. Toss everything together until all the apple pieces are well coated.
Remove the dough from the freezer. Spoon about 1 tablespoon of the apple filling into the center of each dough square. Fold one pointed corner of the dough over to its opposite corner to form a triangle. Use a fork to crimp the edges firmly along the seams, sealing the turnover. Repeat this process for all 16 dough squares.
