Mustard champ
Mustard Champ is a creamy potato mash, punched up with a generous amount of mustard and fresh spring onions. The potatoes are boiled and mashed until smooth, then enriched with warm milk and butter. It comes together quickly and makes an excellent side for gammon or as a topping for a fish pie.

Boil and Mash Potatoes
Bring a large pot of salted water to a boil. Add the 1kg potatoes and cook for about 15 minutes, or until they're easily pierced with a fork. Drain them well, then return to the hot pot and mash until smooth. - 02
Warm Milk and Butter
While the potatoes are still warm, gently heat the 200ml milk and 25g (half) of the butter in a small saucepan until the butter has melted and the milk is just simmering. Pour this warm mixture into the mashed potatoes, then beat in the 2 tablespoons of mustard until everything is well combined and creamy.
