Preheat your oven to 375°F. Meanwhile, warm the 1 tablespoon canola oil in a skillet over medium heat. Once shimmering, add the 4 ounces ground chicken and brown it for a few minutes, breaking it up with a spoon.
Stir in the chopped onion and bell pepper.




Let the chicken and bean mixture cool for a few minutes, or pop it in the refrigerator for a quicker chill.
In a baking dish, spread about 2 –3 tablespoons of the remaining enchilada sauce on the bottom. Lay one corn tortilla over the sauce, then spread 1 tablespoon of sauce over the tortilla. Spoon some of the chicken-bean mixture on top, followed by about 1 tablespoon of the 6 ounces sharp cheddar cheese (or more, if you like a cheesier lasagna).
