Mbuzi Choma (Roasted Goat)
Mbuzi Choma is a Kenyan roasted goat dish, typically served with ugali, a thick cornmeal porridge, and kachumbari, a fresh tomato and onion salad. The goat meat is roasted until tender, seasoned simply with salt as it cooks. While the meat roasts, you'll prepare the ugali, stirring cornmeal into boiling water until it forms a firm, cohesive mass. The kachumbari comes together quickly by mixing chopped fresh vegetables.

Roast the Goat
Roast the goat meat over medium heat for about 50 minutes, turning it occasionally. Season with salt each time you turn the meat. - 02
Cook the Ugali Base
Bring water and a pinch of salt to a boil in a heavy-bottomed saucepan.
Gradually stir in the corn flour, letting it fall slowly through your fingers into the boiling water.
