Mad Men Oysters Rockefeller
Oysters Rockefeller, a classic dish, features briny oysters baked with a savory topping. This version uses spinach, shallots, and a touch of Pernod for a subtle anise note, all topped with buttered breadcrumbs. It’s a dish that feels fancy but comes together fairly easily, especially if you have a good oyster shucker on hand. The rock salt in the baking dish helps keep the oysters stable as they bake, ensuring the topping stays put.

Prepare Baking Dish
Preheat your oven to 450°F.
Fill 4 pie or cake tins (or a baking dish large enough to hold the oysters) with rock salt, but no more than half full. You just need enough salt to keep the oysters from rocking back and forth as they bake.
