Mix and Form Burgers
Combine the lamb mince with the onion, garlic, garam masala, coriander, chili sauce, and a good pinch of salt in a large bowl. Get your hands in there and squelch everything together until it's thoroughly mixed. Once combined, pat the mixture into 16 small burgers. You can freeze these for up to 1 month or chill them for up to 1 day before cooking. - 02
Grill the Kofta
To cook, preheat your grill to its highest setting. Arrange the burgers in a single layer on a baking tray — you might need to work in batches if your tray isn't large enough. Grill them on the highest shelf for 5–6 minutes on each side, until they're nicely browned and cooked through to the center. Serve the kofta hot, piled onto a platter with all the accompaniments, so everyone can build their own pita sandwich.
