Dip each chicken piece into the egg white, ensuring it's lightly coated. Transfer the wet chicken to the seasoned flour mixture.
Turn the chicken a few times, pressing gently to make sure the flour mixture adheres well to the surface. Repeat this process for all the remaining chicken pieces.
Carefully lower the chicken pieces into the hot oil, frying in batches to avoid overcrowding the fryer. Breasts and wings typically cook in 12–14 minutes, while legs and thighs will need a few extra minutes.
The chicken is done when a meat thermometer inserted into the thickest part of the piece registers 165°F.
