   Preheat Oven

   Get your oven going to 350 °F (180 °C) and line a large baking sheet with parchment paper. This helps prevent sticking and makes cleanup easier.

   Cream Wet Ingredients

   In a stand mixer fitted with the paddle attachment, cream the butter, white sugar, and egg until they're just combined. Then, add the molasses and vanilla, mixing until the mixture looks smooth.

   Add Baking Soda Mixture

   Once the wet ingredients are combined, add the baking soda and water mixture. Mix for another minute to fully incorporate it.

   Mix Dry into Wet

   In a separate bowl, whisk together the baking powder, cinnamon, flour, and salt. Gradually add this dry mixture to the wet ingredients in the stand mixer, mixing on low speed until everything is just combined.

   Make sure to scrape down the sides of the bowl to ensure all the flour is incorporated. The dough should be soft enough to easily shape by hand.

   Shape Cookies

   Using a small spoon, portion out the dough and roll each piece into a ball. Place these balls on your lined cookie sheet, then gently press them into flat discs. You can use a floured glass or your moistened palm for this.

   Bake and Cool

   Bake the cookies for 10 to 12 minutes, until the edges are lightly set. Remove them from the oven and let them cool on the baking sheet for at least 10 minutes before moving.

   Assemble Cookie Sandwiches

   Once the cookies are completely cooled, spread at least two teaspoons of your favorite jam between two cookies to make a sandwich. Repeat with the remaining cookies and serve with a cup of tea.
