How to Make The Ultimate Slow Cooker Potato Soup

   Coat Potatoes

   Toss the cubed potatoes with 3 tablespoons of flour until they're evenly coated, then transfer them to your slow cooker.

   Add Aromatics and Bacon

   Scatter the diced onion and 8 slices of bacon (cut into pieces) over the potatoes in the slow cooker. Finish with a sprinkle of 1 tablespoon of pepper.

   Cook Potatoes

   Pour 2 cups of vegetable stock over everything in the slow cooker. Cover and cook on high heat for 3 and 1/2 hours, until the potatoes are very tender.

   Mash and Finish Soup

   Once the potatoes are cooked, use a potato masher to lightly mash them directly in the slow cooker; you want some texture, not a completely smooth purée. Stir in 1 cup of half and half.
