Hodge Podge
Hodge Podge is a creamy, herby vegetable dish that brings together new potatoes, carrots, green beans, and peas in a rich milk and cream base. The vegetables are briefly cooked until just tender, then warmed gently in butter before simmering with fresh dill and chives. It's a straightforward way to highlight fresh produce, served warm as a side or a light main.

Cook the Vegetables
Bring a large pot of salted water to a boil. Add the carrots and potatoes and par-cook for five minutes, until they are just fork tender. Drop in the peas and green beans for about a minute more to blanch them.
Strain all the vegetables and set them aside.

Warm in Butter
In a heavy-bottomed pot or Dutch oven, melt the butter over medium heat. Add the cooked vegetables and stir gently to warm them through.
