Healthy & Spicy Fish Taco Salad

Place the fish in a glass container. In a small bowl, whisk together the vegetable oil, red pepper flakes, juice of 1 lime, ancho chili powder, salt, and pepper. Pour this marinade over the fish, tossing gently to coat both sides. Let it sit for 15 minutes to absorb the flavors.
While the fish marinates, preheat your grill to medium-high heat. In a large frying pan, add enough vegetable oil to reach a 1/2-inch depth.
Place a piece of tin foil directly onto the preheated grill and add the marinated fish. Cook for about 4 minutes per side, or until the fish flakes easily with a fork.
While the fish is cooking or just after, start assembling your salads. Arrange the romaine lettuce at the bottom of large plates or bowls. Top with cherry tomatoes, onion, and corn. Place a piece of grilled fish on top, add a dollop of fresh salsa, and drizzle generously with the dressing.
