Grilled Portuguese sardines

In a bowl, combine the olive oil, minced garlic, paprika, chopped rosemary, and finely chopped red chili. Season with salt and pepper until everything is well combined and fragrant.
Pour this mixture into a baking dish, add the sardines, and toss them gently to ensure they're thoroughly coated. Cover the dish and chill in the refrigerator for a few hours to let the flavors meld.
Heat a BBQ or griddle pan over high heat until it's smoking slightly. Cook the marinated sardines for 4–5 minutes on each side, until they're deeply caramelized and charred.
Transfer the cooked sardines to a serving plate. Drizzle with a little more olive oil, sprinkle with paprika, and squeeze over the lemon wedges before serving.
