Sift Dry Ingredients
Sift the flour, baking powder, baking soda, salt, ginger, allspice, and cinnamon into a bowl. This ensures everything is evenly distributed and helps keep the puffs light.
Switch the palette to suit the room. Your choice is saved locally.



Add the shortening, brown sugar, eggs, molasses, and oatmeal to the bowl with the sifted dry ingredients. Beat everything together until the batter is smooth, which should take about 2 minutes.
Once the batter is ready, drop it by teaspoonfuls onto greased cookie sheets, leaving a little space between each one.
Once the ginger puffs have cooled, you can sprinkle them with confectioners' sugar, if you like.
A quick note on the oatmeal: if you're using Quaker Oats (either quick or old fashioned), they should be cooked according to package directions.
