Slice the Sirloin
Grab your sirloin steak and slice it thinly against the grain into strips about 1 inch wide. Cutting against the grain helps keep the beef tender in the stir-fry.

First, cut each water chestnut in half. In a large skillet or wok, heat the 2 tablespoons vegetable oil over high heat until it's just shimmering. Add the sirloin strips and quickly brown them, letting them get a little color on all sides.
Now, stir in the halved water chestnuts, carrots, onion, garlic, and ginger. Keep stirring until the onion starts to soften, which should take a few minutes. Next, add the bell pepper and lettuce, stirring them into the mix for just one minute—you want them to warm through but still have some crispness.
Finally, pour in the 1/4 cup orange marmalade and 1/4 cup soy sauce. Give everything a good stir and cook for another 2 minutes, letting the sauce coat the beef and vegetables.
