Fried Crab
This fried crab recipe begins with boiling whole crabs and carefully extracting their sweet meat. Once the crab is ready, you'll quickly sauté it with diced onions and a scotch bonnet pepper until the onions are translucent and the kitchen smells wonderfully aromatic. The seasoned crab meat then cooks for just a few minutes, warming through and absorbing the flavors. While it's often served simply alongside starchy vegetables, you can also spoon the seasoned mixture back into cleaned crab shells and bake them for a more substantial presentation.

Boil and Extract Crab Meat
Start by washing the crabs thoroughly. Boil them in a large pot of water for 15 minutes. Once cooked, remove the crabs from the boiling water and let them cool down enough to handle. Crack open the legs and backs to carefully remove all the meat, then set it aside. - 02
Sauté Aromatics and Crab
While the crab cools, remove the seeds from the scotch bonnet pepper and dice both the pepper and the onions. In a pan, sauté the diced onions and scotch bonnet in 1/4 cup oil over medium heat until the onions start to turn transparent. Add the reserved crab meat, 1/2 teaspoon black pepper, and salt (to taste), stirring occasionally. Continue to cook over medium heat for an additional 5 to 10 minutes, just until everything is warmed through and fragrant.
