Figgy Thyme Recipe

First, crush some ice and fill a collins glass with it. In a cocktail shaker, muddle the 3 figs and 1 sprig thyme together until the figs are broken down and the thyme is fragrant.

Add the 1 tsp honey, 2 oz vodka, and a large ice cube to the shaker. Shake vigorously until the shaker is frosty and the drink is well chilled. Strain the mixture into your prepared collins glass, then top with tonic water and finish with 2 dashes Angostura bitters. Garnish with a few sliced figs and another sprig of thyme, if you like.
