Once the 5 minutes are up, immediately drain the hot water and cover the eggs with cold water and ice to cool them completely. To peel, crack each egg all over by gently rolling it on the countertop. Peel, rinse, and then dry the peeled eggs on paper towels.
Add the 1/4 cup real mayonnaise, 1 teaspoon mustard, 1 teaspoon apple cider vinegar, 1 teaspoon sugar, and a generous amount of salt and pepper to the bowl with the yolks. Use a fork to mix and mash everything together until the mixture is smooth and creamy.
Scoop the yolk filling into a Ziploc bag. Snip off a small piece from one corner of the bag, then pipe the creamy yolk mixture into each egg white half.
